Strawberry Banana MuffinsStrawberry Banana Muffin SlicedSo, what do you do with those bananas that are looking a bit rough? Make banana muffins, of course! I alternate between strawberry-banana and blueberry-banana, depending on which kid answers first. If I have a lot of bananas, I will make both.

I usually make them at least twice a month. But lately, I have been making them once a week, thanks to my wonderful mother-in-law. The grandparents take the kids for the day and I receive bananas. Go figure. That’s ok, because when she brings back the kids, I pay her with muffins. Lucky woman? I think so.

Recently, I have been adding a little streusel topping. A little surprise for my daughter, since she only likes to eat the muffin tops. I’ll ask her if she wants a muffin. She replies saying that she will have the top and I can eat the rest. Now, who’s the lucky one? Enjoy.

Cinnamon Rolls

Cinnamon Rolls in DishCinnamon Roll PlatedFor the new year, I decided to try making cinnamon rolls. I had never made them before. I know a few of you are saying, “Really?” And yes, I am sad to say that I have never made homemade cinnamon rolls.┬áIt was just easier to buy them. BUT now, that has all changed.

I found a recipe from one of the blogs that I follow. I fell in love with the way they looked in the picture and had to make them. Now, I did omit the orange and made plain rolls. I figured that I shouldn’t be too adventurous on my first attempt. The recipe did make 24 rolls. If you can’t eat that much or don’t have In-laws that live down the road, I would suggest that you halve the recipe. I am glad that i made the whole batch on the first try, because the kids had fun helping me “floss” the dough.

The next morning, I took them out of the fridge, let them sit out for an hour and then popped them in the oven. I waited for the oven to work its magic. I did have to stop the magic show a few minutes early. The family and I hate burnt tops on our cinnamon rolls. I plated, iced and served. Now, for the fun part…the taste testing. I made a few edits to the recipe. I will be adding brown sugar next time. Also, the icing will need to be tweaked. It wasn’t bad, it’s just not what the kids are used to. Overall, I would have to say, not bad at all for my first try. I will definitely be making them again. Enjoy.
